The Indian S31 Sugar Specifications refer to the standards set by the Food Safety and Standards Authority of India (FSSAI) and the Bureau of Indian Standards (BIS) for plantation white sugar (S31 grade).

1. Grade: S31 (Plantation White Sugar)

2. Polarization: ≥ 99.7°Z (minimum sucrose content)

3. Moisture Content: ≤ 0.07% (max)

4. Ash Content: ≤ 0.04% (max)

5. Color (ICUMSA): ≤ 150 IU (International Units)

6. Granulation: Medium to fine crystals

7. Solubility: Should be fully soluble in water

8. Conductivity Ash: ≤ 0.04% (max)

9. Sulfur Dioxide (SO₂): ≤ 70 mg/kg (max)

10. Sediments: Should be free from foreign matter

Additional Quality Checks:

• Reducing Sugar: ≤ 0.05% (max)

• Magnetic Particles: ≤ 4 mg/kg (max)

• Microbial Contamination: Should comply with FSSAI standards

Export & Packaging:

• Typically packed in 50 kg polypropylene bags (food-grade).
